Happy first day of fall everyone! It's still nice and warm here in Toronto so before we tuck into those warming soups and stews and curries for chilly nights, let's have a few more raw veg nights and make this lovely, hearty kale salad. This is one of my favourite salad dressings featuring the earthy aroma and peppery taste of CUMIN!
Cumin has some amazing health benefits, including aiding your digestion so you can process those great phytonutrients from your kale. The high iron content is good for women who are pregnant (or anyone lacking iron), and for new moms cumin can help with lactating. Cumin is high in calcium, vitamin C, vitamin A, and essential oils that can boost our immune system in a number of ways, so good to stock up now that cold season is coming up!
This is really simple to get together. Just mix 1/3 cup lemon juice, 2/3 cup olive oil, a teaspoon of cumin and a tablespoon or two of maple syrup. Grate a clove or two of garlic, shake it all up in a mason jar and give it a fancy name like Cumin Kale Love above. I could have also called this just Garlic Love since I ended up throwing in a few extra garlic cloves - super healthy! I have no idea why people buy store salad dressing anymore with all those crazy extra ingredients. You could store it for a few days but it's so quick to make better to make on the spot and eat fresh.
Pour it over those greens, add a little salt and pepper and massage in. I've seen recipe variations using lime or orange vs lemon and then including orange segments. Red onion gives some brightness and punch. But today I'm using up those last lovely niagara peaches and throwing on a few pumpkin seeds just for fun. Enjoy!
