This is one of our favourite dishes when we have people over and always gets rave reviews. Mix together a quick marinade with turmeric, garam masala, cayenne, freshly grated ginger and garlic, lime and yoghurt. This tastes great with chicken or if you want to get a bit fancier: lamp lollipops. Lamb chops or lamb lollipops are perfect for parties because they come with their own little built in stick: easy to serve, fun to eat. They're also quick to make: marinate the night before and grill or broil for 2-3 minutes on each side and you're ready to go. Serve with a side salad and this dish is also a super fast weeknight meal.
Marinades are great for holiday entertaining because you can prep everything the night before, giving time for the flavour to really soak into the meat. It's also a healthier way to eat grilled meat, since the antioxidants in turmeric, ginger and garlic can drastically reduce any carcinogens that would normally form. Full recipe below.
Spicy Lamb Lollipops - serves 4
Ingredients - Marinade:
1/4 cup greek yoghurt (or cashew cream)
Juice from 1 lime
2 garlic cloves, minced
1 thumb of fresh ginger, grated
1 teaspoon ground turmeric
1 teaspoon of garam masala
1/4 teaspoon of cayenne pepper
Meat: 8 lamb chops
Mix all ingredients into a paste and rub into lamb chops. Leave in fridge overnight and take out 30 minutes before cooking. Broil or grill lamb chops on high heat for 2-3 min each side.
